1 cup fresh basil
1/2 cup pecans
1/4 cup cashews
2 Tbsp nutritional yeast
~ 2 Tbsp olive oil
~1 Tbsp lemon juice
dash of salt
1. Combine all ingredients in a food processor and mix until a uniform consistency is achieved, adding more olive oil as necessary.
2. Fold into cooked pasta or use as a spread, dip, pizza topping, or sandwich filling.
I’ve never used anything other than pine nuts for pesto, i’ll definitely have to give this recipe a try! A much cheaper way to go!
