Have some leftovers and corn tortillas in the fridge? Craving something fried? Tired and hungry? Try these five minute flautas. I used leftover mashed potatoes, grilled chicken, and cheese, and finished it off with a smoky chipotle salsa.
These make a fun alternative to tostadas–similar flavor and texture, different shape that easy for dipping!
6 corn tortillas
~2/3 cup chosen filling (meat, potatoes, cheese, beans, or grilled veggies)
2 Tbsp olive oil*
2 Tbsp butter*
Lettuce, sour cream, guacamole, and/or salsa to garnish
1. In a skillet (preferably a cast-iron, as pictured), heat half of oil and butter over medium high heat until bubbling.
2. Warm tortillas in a microwave or oven until soft and pliable (about 1-2 minutes in microwave). Spoon about 2 tablespoons of filling into each tortilla and roll tightly. Set aside, fold down. Add remaining butter and oil as necessary.
3. Carefully place flautas in skillet, using tongs and/or oven gloves as necessary. Fry on each side for approximately one minute, until crispy and browned. If all your flautas won’t fit in the skillet, do a few at a time, and place the cooked ones aside on paper towels to drain a little grease off.
4. Serve immediately with garnish of lettuce and your choice of dips. I like sour cream.
